Ingredients
Chicken and Marinade
- 3 (4 oz) boneless skinless chicken breasts
- 2 tablespoons taco seasoning (1 packet), divided
- 1 tablespoon olive oil
Rice Mixture
- 1 cup quick brown rice (or white rice)
- 1 cup water
- 2 tablespoons taco seasoning (part of the above 2 tablespoons)
Vegetables & Beans
- 1 cup bell pepper, sliced into thin strips
- 1/4 cup onion, sliced into thin strips
- 1/2 cup black beans
Toppings
- 1/3 cup salsa
- 1/2 cup mozzarella or cheddar cheese
- 1 lime, cut into wedges (optional)
- Fresh cilantro and sour cream for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (204°C). Line a baking sheet with three sheets of aluminum foil, each about 6-8 inches long. Set this aside for assembling the packets.
- Prepare Rice Mixture: In a medium bowl, combine the quick brown rice, water, and 2 tablespoons of taco seasoning. Stir well and let it soak for 5 minutes.
- Assemble Foil Packets: Divide the rice mixture evenly onto the three sheets of foil. Pound each chicken breast with a meat tenderizer or rolling pin until even thickness. Season each chicken breast generously with the remaining taco seasoning and place each piece on top of the rice on the foil sheets.
- Add Toppings and Vegetables: Spoon a few tablespoons of salsa over each chicken breast, then sprinkle with mozzarella or cheddar cheese. Arrange the sliced bell peppers, onions, and black beans on the sides of the chicken within each packet. Drizzle each packet with olive oil.
- Seal Packets: Fold the foil sides over the chicken and rice mixture, completely covering everything. Seal the packets tightly to trap steam and flavors inside.
- Bake: Place the foil packets on the baking sheet and bake in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Broil for Finish: Carefully open the foil packets and place them under the broiler for 3 to 4 minutes to brown the cheese and slightly crisp the top.
- Serve: Remove the packets from the oven, squeeze fresh lime juice over each, and garnish with cilantro and sour cream if desired. Serve immediately and enjoy your delicious Southwestern chicken and rice meal.
