Ingredients

Crispy Rice

  • 3 cups Cooked Sushi Rice (short grain rice)
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sugar
  • 1 tsp Salt
  • Vegetable Oil for frying

  • 1 lb Sushi-grade Salmon, chopped
  • 4 tbsp Kewpie Mayo
  • 2 tbsp Sriracha
  • 2 tbsp Scallion, finely chopped
  • 2 tsp Soy Sauce
  • 2 tsp Sesame Oil

For Serving

  • Sliced Avocado
  • Jalapeno, thinly sliced
  • Black and White Sesame Seeds, toasted


Instructions

  1. Prepare Rice Seasoning: In a small mixing bowl, combine rice vinegar with sugar and salt. Stir until all ingredients are fully dissolved to create the sushi rice seasoning.
  2. Season the Rice: Pour the rice vinegar mixture over the cooked sushi rice and mix thoroughly but gently until evenly combined, ensuring the rice is flavorful.
  3. Chill the Rice: Transfer the seasoned sushi rice onto a baking pan lined with plastic wrap. Gently press the rice down to form an even, compact layer. Cover and refrigerate for at least 4 hours or overnight to firm up the rice.
  4. Prepare Spicy Salmon Mixture: Chop sushi-grade salmon into small pieces and place in a bowl. Add Kewpie mayo, sriracha, soy sauce, finely chopped scallion, and sesame oil. Mix well until all ingredients are evenly incorporated. Refrigerate until ready to use to let the flavors meld.
