Ingredients
For the Quesadillas
- 4 tortillas
- 1/4 cup marinara or pizza sauce
- 1 cooked chicken breast, chopped fine (about 1/4 cup)
- 1/2 cup dinosaur kale, cooked and diced
- 1 cup mozzarella cheese, grated or 4-5 mozzarella cheese sticks cut into 8 pieces each
Instructions
- Prepare the Tortillas: Place both tortillas flat in front of you and spread each with 2 tablespoons of marinara or pizza sauce. Alternatively, you can build the quesadilla directly in the pan if preferred.
- Add the Toppings: Top one tortilla with 1/4 cup of cooked, chopped chicken, 1/4 cup of cooked dinosaur kale (or your preferred toppings), and 1/2 cup of mozzarella cheese. You can customize the amount and order of toppings to your liking.
- Assemble the Quesadilla: Place the second tortilla on top, sauce side down, covering the toppings. Press down lightly to secure the quesadilla layers together.
- Cook the Quesadilla: Slide the assembled quesadilla into a dry skillet or pan over medium heat. Cook for about 3 minutes on each side, or until the tortilla is golden and crispy and the cheese inside is fully melted.
- Serve: Remove the quesadilla from the pan, cut into wedges, and serve warm.

- You can customize the fillings with vegetables or other proteins of your choice.
