Ingredients
Shrimp and Marinade
- 1 pound colossal shrimp – raw, peeled and deveined
- ¼ cup olive oil
- Zest and juice of 2 lemons
- 4 tablespoons minced garlic
- 1 tablespoon honey
- Salt and black pepper to taste
- 1 tablespoon freshly chopped parsley

Instructions
- Prepare the shrimp: Place the peeled and deveined shrimp in a large mixing bowl and set aside.
- Mix the marinade: In a smaller bowl, combine olive oil, lemon zest, lemon juice, minced garlic, honey, salt, and black pepper. Stir well to create the marinade.
- Marinate the shrimp: Pour the marinade over the shrimp and stir gently to coat all pieces evenly. Cover the bowl and refrigerate for 1 hour to allow flavors to develop.
- Preheat the oven: When ready to cook, preheat the oven to 450°F (232°C). Line a large rimmed baking sheet with parchment paper or aluminum foil for easy cleanup.
- Thread shrimp onto skewers: Thread 2 to 3 shrimp onto each bamboo or metal skewer. Discard any remaining marinade left in the bowl.
- Bake the shrimp skewers: Place the skewers on the prepared baking sheet. Bake for 4 to 6 minutes, flipping halfway through the cooking time and basting with pan juices to keep shrimp moist and flavorful.
- Finish and serve: Brush the cooked skewers with juices from the pan. Sprinkle with freshly chopped parsley and serve immediately with sliced lemons on the side.
