Description

Mexican Molletes are a traditional open-faced sandwich perfect for breakfast, brunch, or a quick snack. Featuring toasted bolillo bread topped with creamy refried beans, melted Monterey Jack cheese, and fresh, zesty pico de gallo, this recipe provides a delicious blend of textures and flavors that celebrate classic Mexican cuisine.

Ingredients

Bread and Beans

  • 2 bolillo rolls (or similar crusty bread)
  • 1 cup refried beans

Cheese

  • 2 cups Monterey Jack cheese, shredded

Pico de Gallo

  • 2 tomatoes, diced
  • ¼ onion, diced
  • 1 jalapeno, finely diced
  • 1 tablespoon cilantro leaves, chopped
  • 2 tablespoons lime juice
  • ½ teaspoon salt

Instructions

  1. Slice the bread: Cut each bolillo roll in half horizontally, creating four bread halves to prepare the molletes.
  2. Spread refried beans: Evenly smear approximately 2 tablespoons of refried beans onto the cut side of each bread half to form the base layer.
  3. Add cheese: Sprinkle shredded Monterey Jack cheese generously over the refried beans on each bread half.
  4. Preheat broiler: Set your oven to the broiler setting to prepare for melting the cheese.
  5. Broil the molletes: Place the prepared bread halves on a sheet pan and put them under the broiler for about 7 minutes, or until the cheese is beautifully melted and slightly bubbly.
  6. Prepare pico de gallo: While the molletes are broiling, combine diced tomatoes, diced onion, finely diced jalapeno, chopped cilantro, lime juice, and salt in a bowl. Mix well to allow flavors to meld.
  7. Top and serve: Once the cheese has melted, remove the molletes from the oven, spoon the fresh pico de gallo generously over the cheese-topped bread halves, and serve immediately for the best taste.

Notes

  • Bolillo rolls are traditional, but other crusty rolls or French bread can be used as substitutes.
  • Adjust the amount of jalapeno in the pico de gallo according to your preferred spice level.
  • For a vegetarian option, ensure refried beans do not contain lard.
  • Enjoy molletes fresh out of the oven for the best texture and flavor.
  • Leftover pico de gallo can be stored separately in the refrigerator for up to 2 days.
