Description

This zesty Lemon Chicken Soup is the ultimate comfort food, perfectly balancing tender shredded chicken, nutritious vegetables, and a bright citrus finish. Ideal for busy weeknights or a soothing weekend meal, this wholesome soup relies on simple pantry staples to create restaurant-quality flavors at home. It is naturally protein-packed, family-friendly, and perfect for meal prepping, making it a reliable staple for your recipe collection.

Ingredients

Soup Base

  • 1 tablespoon olive oil
  • 2 cups diced carrots
  • 1 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1 tablespoon minced garlic

Seasonings

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 2 bay leaves

Main & Liquids

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • 1/2 cup fresh squeezed lemon juice

Instructions

  1. Sauté the Aromatics: In a large pot, heat the olive oil over medium-high heat. Add the carrots, onion, celery, and garlic, and sauté for 5 minutes until they are softened and fragrant.
  2. Simmer the Soup: Add the black pepper, parsley, thyme, salt, bay leaves, chicken breasts, and chicken broth to the pot. Stir well, cover, and bring to a boil. Reduce heat to medium and simmer for 15 minutes.
  3. Cook the Pasta and Shred Chicken: Remove the chicken breasts and bay leaves. Add the orzo pasta to the broth and cook for half the package’s recommended time. Meanwhile, use two forks to shred the chicken.
  4. Combine and Finish: Remove the soup from the heat. Stir in the shredded chicken and fresh lemon juice. Serve immediately while hot.

Notes

  • You can substitute orzo with other small pasta shapes like ditalini or even rice. For a gluten-free option, use quinoa or wild rice instead.
  • To store, keep in an airtight container in the refrigerator for up to 4 days; note that the pasta will continue to absorb broth over time, so add a splash of water when reheating.
  • Use freshly squeezed lemon juice rather than bottled for the brightest, most authentic citrus flavor.
  • For an extra creamy texture, stir in a spoonful of plain Greek yogurt right before eating.
  • Make sure to remove the bay leaves before serving to ensure a pleasant texture.
  • If you want firmer pasta, cook your noodles in a separate pot and add them to individual bowls just before serving.
