Description

This Lemon Chicken and Veggie Orzo Stir Fry is a vibrant and wholesome one-pan meal combining tender diced chicken breast, colorful vegetables, and orzo pasta, all brightened with fresh lemon juice and zest. It’s a quick, easy, and flavorful dish perfect for busy weeknights and picky eaters, featuring a delicious balance of protein, veggies, and zesty citrus notes.

Ingredients

Orzo and Pasta

  • 1 cup orzo pasta

Protein and Oil

  • 2 tablespoons olive oil, divided
  • 1 pound chicken breast, diced

Seasonings

  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)

Vegetables

  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 cup broccoli florets

Citrus and Cheese

  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup grated Parmesan cheese

Garnish

  • Fresh parsley for garnish

Instructions

  1. Cook Orzo: Bring salted water to a boil and cook 1 cup of orzo pasta according to package directions until al dente. Drain thoroughly and set aside.
  2. Sauté Chicken: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the diced chicken breast, sprinkle with garlic powder, salt, and black pepper. Cook, stirring frequently, until the chicken is golden brown and cooked through, about 6 to 7 minutes. Remove cooked chicken from the skillet and set aside.
  3. Cook Vegetables: In the same skillet, add the remaining 1 tablespoon of olive oil. Add diced zucchini, red bell pepper, and broccoli florets. Sauté the vegetables for 5 to 6 minutes until they are tender yet slightly crisp.
  4. Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Add the cooked orzo pasta back into the skillet as well.
  5. Add Flavorings: Stir in the lemon juice, lemon zest, dried oregano, and red pepper flakes (if using). Toss everything well to distribute the flavors evenly throughout the dish.
  6. Finish with Cheese: Sprinkle 1/4 cup grated Parmesan cheese over the mixture and stir until the cheese has melted and fully incorporated.
  7. Garnish and Serve: Garnish the stir fry with fresh parsley. Serve warm and enjoy this zesty, wholesome meal.

Notes

  • Add a splash of chicken broth or cream for extra sauciness and creaminess if desired.
  • Swap orzo for rice or quinoa as alternative grains based on preference or dietary needs.
  • For added nutrition and volume, toss in fresh spinach or peas at the last step to wilt.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days, and reheat gently before serving.
