Ingredients

Instructions

  1. Prepare Dry Base: In the bowl of a food processor, combine the raw cashews, rolled oats, and shredded coconut. Blend these ingredients until they are finely ground and well combined, forming a coarse flour texture.
  2. Add Flavor and Sweeteners: To the processed dry mixture, add pitted Medjool dates, hemp seeds, maple syrup, lime zest, fresh lime juice, vanilla extract, and sea salt. Blend again until the mixture comes together into a sticky, dough-like ball. This ensures all ingredients are evenly incorporated.
  3. Form Energy Bites: Using a small cookie scoop or tablespoon, measure out the mixture into 12 equal portions. Roll each portion into a smooth ball using your hands. For an extra touch, roll the balls in graham cracker crumbs or additional shredded coconut to coat them before serving.
