Ingredients
Cheese Sticks
- 16 mozzarella sticks, sliced in half crosswise
Breading Mixture
- 1/2 cup almond flour
- 2 cups crushed parmesan crisps
- 1/2 tsp garlic powder
- 2 tsp Italian seasoning
- Salt and pepper to taste
Other
- 2 large eggs, beaten
- Oil for frying (such as avocado or vegetable oil)
- 1 cup marinara sauce, for serving
Instructions
- Prepare the breading mixture: In a shallow bowl, combine the almond flour, crushed parmesan crisps, garlic powder, Italian seasoning, salt, and pepper. For a finer coating, optionally pulse these ingredients in a food processor until they reach a fine crumb texture.
- Prepare the egg wash: In a separate bowl, whisk the two large eggs thoroughly to create an egg wash.
- Coat the mozzarella sticks: Dip each mozzarella stick half into the beaten eggs, then thoroughly coat it with the breading mixture. Press the coating gently onto each stick to ensure it sticks well.
- Freeze the coated sticks: Arrange the coated mozzarella sticks on a parchment-lined tray or plate and freeze them for at least 2 hours. This step is essential to make sure the cheese does not melt too quickly when frying.
- Heat the oil: Pour oil into a non-stick pan to an appropriate depth for shallow frying and heat over medium heat until hot but not smoking.
- Fry the mozzarella sticks: Fry the mozzarella sticks in batches for 2-3 minutes per side, or until they are golden brown and crispy. Be careful not to overcrowd the pan to maintain the oil temperature.
- Drain excess oil: Remove the fried sticks using a slotted spoon and place them on paper towels to drain any excess oil.
- Serve immediately: Serve the crispy, melty keto mozzarella sticks hot with marinara sauce or your preferred dipping sauce.
Notes
- Freezing the sticks before frying helps prevent the cheese from oozing out during cooking.
- You can blend the breading ingredients in a food processor for a finer crust.
- Optional variations include adding grated parmesan cheese, smoked paprika, cayenne, or ranch seasoning to the breading mix.
- Leftover sticks keep well in an airtight container in the fridge for up to 3 days; reheat in the oven or air fryer to keep crisp.
- These mozzarella sticks can also be air fried at 390°F for 6–8 minutes or baked at 425°F until crispy.
- Use oils with a high smoke point such as avocado or vegetable oil for frying.
- For a different dipping experience, try ranch, garlic aioli, or spicy marinara sauces.
