Description

Create your own fun, lunch box-sized mini pizzas with this easy DIY Lunchable recipe using Simple Mills Pizza Crust Mix. These assemble-your-own mini pizzas are perfect for lunch packing and can be customized with your favorite toppings, making lunchtime both delicious and interactive.

Ingredients

Pizza Crust

  • 1 box of Simple Mills Pizza Crust Mix
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil
  • 6 tablespoons water

Toppings

  • 2 ounces pepperoni (mini or diced larger ones)
  • 4-6 ounces shredded mozzarella cheese
  • 1 small jar of pizza sauce

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the mini pizza crusts.
  2. Prepare Dough: Mix the pizza crust dough according to the directions on the Simple Mills box, combining the mix with apple cider vinegar, olive oil, and water as specified.
  3. Form Mini Crusts: Divide the dough into 6 to 7 balls. Press each ball into a roughly 4-inch diameter circular crust to create individual mini pizzas.
  4. Bake Crusts: Place each crust on a lightly greased baking sheet and bake for 10 minutes until cooked but not browned heavily.
  5. Cool Crusts: Remove the crusts from the oven and allow them to cool completely if you plan to pack them for lunch to prevent sogginess.
  6. Store and Pack: For storing, place the cooled crusts in an airtight container and refrigerate. When packing multiple crusts, separate them with squares of parchment paper to avoid sticking.
  7. Assemble Before Eating: Just before eating, spread tomato sauce on the crust first, then sprinkle shredded mozzarella cheese and top with pepperoni slices.
  8. Enjoy: Serve immediately after assembling for the best taste and texture.

Notes

  • For best results, allow crusts to cool completely before storing or packing to maintain texture.
  • If packing multiple mini pizzas, separate them with parchment paper to prevent sticking.
  • Toppings should be packed separately to keep crusts from becoming soggy.
  • You can customize toppings as desired—swap pepperoni for veggies or other favorite pizza toppings.
  • This recipe yields 6 servings, making it perfect for a family lunch or meal prep.
