Ingredients

For the Patties

  • 2 lb shrimp (peeled and deveined, divided as 2/3 pureed and 1/3 finely chopped)
  • 4 garlic cloves (minced)
  • 1 tbsp paprika
  • 1 1/2 tbsp Dijon mustard (such as Grey Poupon)
  • 1 1/4 tsp kosher salt
  • 1 tsp seafood seasoning (such as Old Bay)
  • 1/4 tsp cayenne pepper
  • 3 green onions (white and light green parts and dark green tops, sliced separately)
  • 1 large red bell pepper (finely diced)
  • 1/3 cup fresh parsley (chopped)
  • 1 tsp lemon zest
  • 1/4 cup panko breadcrumbs
  • 2 tbsp canola oil (for brushing patties)

For Assembly

  • 6 brioche buns (brushed with butter and toasted)
  • 1/2 cup Greek yogurt (such as Fage Total)
  • 2 tbsp Dijon mustard
  • 2 large tomatoes (sliced)
  • 1 head butter lettuce (leaves separated)
  • 2 avocados (sliced)


Instructions

  1. Prepare Ingredients: Peel and devein the shrimp, dividing into about 1.3 lbs for pureeing and 0.7 lbs for finely chopping. Mince garlic, dice red bell pepper, chop parsley, zest lemon, slice green onions into whites/light greens and dark green tops. Measure spices and have everything ready for assembly to ensure even seasoning.
  2. Make Shrimp Puree: In a food processor, combine the 2/3 portion of shrimp with minced garlic, paprika, Dijon mustard, kosher salt, seafood seasoning, and cayenne pepper. Process until smooth and paste-like. Add half of the diced bell pepper and half of the sliced white/light green green onions, pulse until combined. Transfer to a large bowl.
  3. Mix Patties: Fold the finely chopped remaining shrimp, the rest of the bell pepper, remaining green onions, lemon zest, chopped parsley, and panko breadcrumbs into the puree mixture. Mix gently but thoroughly to combine without destroying the chopped shrimp pieces.
  4. Form Patties and Chill: Divide the mixture into 6 equal portions and form into compact patties about 3/4 inch thick. Place on parchment-lined plate or baking sheet and refrigerate for at least 15 minutes to firm up.
  5. Toast Buns: Preheat grill to 375°F. Brush brioche buns with butter and toast cut-side down on grill for 1-2 minutes until golden. Remove and set aside.
  6. Grill Patties: Brush both sides of chilled patties with canola oil. Place on grill and cook without moving for 4-5 minutes, then flip and cook 3-4 minutes more until lightly charred and internal temperature reaches 165°F.
  7. Prepare Toppings and Sauce: While patties grill, slice tomatoes and avocados, wash and separate lettuce leaves. In a small bowl, mix Greek yogurt and Dijon mustard to create a creamy sauce.
  8. Assemble Burgers: Place grilled shrimp patty on toasted brioche bun, spread yogurt-mustard sauce, then add lettuce, tomato slices, and avocado. Serve immediately for the best flavor and texture.
