Description

High Protein Burger Bowls are a delicious, bun-free dinner option featuring seasoned ground beef or turkey, crisp lettuce, juicy tomatoes, shredded cheddar cheese, roasted potatoes, and a creamy Greek yogurt burger sauce. Ideal for quick weeknight meals or high protein meal prep, these bowls combine hearty flavors and nutritious ingredients for a satisfying and wholesome dish.

Ingredients

For the Bowls:

  • 1 lb lean ground beef (or ground turkey)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 cups chopped romaine lettuce (or mixed greens)
  • 1 cup cherry tomatoes, diced
  • ¼ cup red onion, diced
  • ½ cup dill pickles, chopped
  • 1 cup shredded cheddar cheese
  • 2 cups roasted potatoes or sweet potatoes (optional)
  • 1 cup broccoli slaw (optional)
  • 2 tbsp chopped green onions (optional garnish)

For the Special Burger Sauce:

  • ½ cup plain Greek yogurt
  • 2 tbsp ketchup
  • 1 tbsp mustard
  • 1–2 tsp pickle juice (to taste)

Instructions

  1. Cook the Protein: Heat a skillet over medium-high heat. Add the ground beef or turkey and season it with salt, black pepper, garlic powder, and onion powder. Cook until browned and fully cooked, breaking the meat into crumbles as it cooks to ensure even browning.
  2. Prepare the Vegetables: Chop the lettuce, dice the cherry tomatoes and red onion, and slice the dill pickles. If you choose to include roasted potatoes or sweet potatoes, cook them separately until they are golden brown and tender.
  3. Make the Sauce: In a small bowl, combine the plain Greek yogurt, ketchup, mustard, and 1 to 2 teaspoons of pickle juice according to your taste preference. Stir the mixture until it is smooth and creamy.
  4. Assemble the Bowls: Divide the chopped lettuce among four bowls. Top each portion with the cooked seasoned meat, diced tomatoes, onions, chopped pickles, and shredded cheddar cheese. Add roasted potatoes or broccoli slaw if desired for extra texture and nutrition.
  5. Finish and Serve: Drizzle the creamy burger sauce over each bowl and garnish with chopped green onions if using. Serve immediately for the best freshness and flavor.

Notes

  • Store components separately when meal prepping to keep lettuce crisp and prevent sogginess.
  • Add a fried or soft-boiled egg on top of the bowls for an additional protein boost.
  • Substitute ground beef with ground turkey for a lighter, leaner option.
  • Adjust the amount of pickle juice in the sauce to control the tanginess to your liking.
  • Omit roasted potatoes to reduce carbohydrates, or add sweet potatoes and broccoli slaw to increase fiber content.
