Description

Eggs in Clouds is a delightful and visually impressive breakfast recipe featuring fluffy baked egg whites that create light, airy ‘clouds’ holding perfectly cooked creamy yolks in the center. Enhanced with savory Parmesan cheese, fresh chives, and tender sautéed turkey, this quick and simple dish is perfect for busy mornings, weekend brunches, or special occasions.

Ingredients

Main Ingredients

  • 4 eggs
  • 1/4 cup Parmesan cheese, shredded
  • 1/4 cup chives, chopped
  • 1/4 cup cooked turkey breast, finely diced
  • Pepper to taste

Instructions

  1. Separate the eggs: Carefully separate the egg yolks from the whites, placing the whites into a large metal mixing bowl while keeping each yolk intact in its shell or a small bowl for later use.
  2. Whip the egg whites: Using a mixer or whisk, beat the egg whites until stiff peaks form, ensuring they hold their shape well.
  3. Fold in flavorings: Gently fold the shredded Parmesan cheese, chopped chives, and finely diced cooked turkey into the whipped egg whites to maintain the airy texture.
  4. Prep the baking sheet: Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  5. Create the clouds: Spoon the whipped egg white mixture into four equal mounds on the prepared baking sheet, then use the back of a spoon to create a deep well or indentation in the center of each mound for the yolks.
  6. First bake: Bake the egg white mounds in a preheated oven at 450°F (232°C) for 3 minutes to start setting them.
  7. Add the yolks: Carefully remove the baking sheet and gently place one egg yolk into the well of each cloud. Season each yolk with pepper to taste.
  8. Final bake: Return the baking sheet to the oven and bake for an additional 2 to 3 minutes, or until the yolks are cooked to your preferred doneness—soft and creamy or slightly firmer.
  9. Serve immediately: Remove from oven and serve the eggs warm while the whites remain fluffy and the yolks creamy.

Notes

  • For richer flavor, substitute Parmesan with shredded cheddar, Gruyère, or Pecorino Romano.
  • Mix in fresh herbs like parsley, dill, thyme, or green onions for different flavor profiles.
  • Add a pinch of paprika or cayenne pepper for a subtle heat.
  • Sprinkle everything bagel seasoning on top before serving for extra texture and flavor.
  • Serve over toasted sourdough or English muffins for a heartier breakfast.
  • Add sautéed spinach or mushrooms on the side for a complete, nutritious meal.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • Reheat in a 300°F (150°C) oven for 5–7 minutes to retain the fluffy texture; avoid microwaving.
  • Fold ingredients gently into egg whites to prevent deflation.
  • Whip and bake the egg whites soon after preparation to maintain volume and fluffiness.
