Description
Circus Animal Cookie Lush is a light, fluffy, and creamy no-bake dessert that combines the nostalgic flavor of circus animal cookies in both the crust and the topping. This easy-to-make treat features a buttery cookie crust, a smooth vanilla pudding filling, and a whipped topping garnished with colorful sprinkles and cookie crumbles, perfect for any dessert lover craving something fun and festive.
Ingredients
Crust
- Two (11 oz each) bags Circus Animal Cookies, divided
- 1/4 cup melted butter
Filling
- One (3.4 oz) box instant vanilla pudding mix (dry mix only)
- 1 cup milk
- One (16 oz) tub whipped topping, thawed, divided
- Pink food coloring (optional)
Topping
- Remaining Circus Animal Cookies, very coarsely crushed (amount as desired)
- 1/4 cup rainbow jimmie sprinkles
Instructions
- Prepare the pan: Line an 8×8 inch square baking pan with foil, letting the foil extend over the edges for easy removal. Lightly spray the foil with cooking spray to prevent sticking, and set aside.
- Make the crust: In a food processor, pulse one 11 oz package of Circus Animal Cookies until they are coarsely crushed. Add the melted butter and pulse briefly until the mixture is combined and crumbly. Press this crust mixture evenly into the prepared pan, forming a compact base. Set aside.
- Prepare the pudding filling: In a large bowl, whisk together the instant vanilla pudding mix and milk until smooth and thickened. If desired, tint the pudding lightly with pink food coloring for a fun, colorful touch.
- Fold in whipped topping: Gently fold half of the whipped topping into the pudding mixture until fully incorporated and smooth. Pour this creamy filling over the cookie crust, spreading evenly with a spatula.
- Add final topping: Spread the remaining whipped topping over the pudding layer as a frosting. Then, coarsely crush some of the remaining Circus Animal Cookies (not necessarily the entire remaining bag) and sprinkle them evenly over the top, along with the rainbow jimmie sprinkles for a festive look.
- Chill and serve: Cover the dessert tightly with foil or plastic wrap and refrigerate for at least 8 hours, preferably overnight, to allow it to set and flavors to meld. Use the foil edges to lift the dessert out of the pan, slice, and serve chilled.
Notes
- Be sure to thoroughly crush the cookies for the crust and topping but keep some texture for added crunch.
- Pink food coloring is optional but adds a fun, festive touch mimicking the classic pink frosting on circus animal cookies.
- Use a light hand when folding the whipped topping into the pudding to keep it fluffy.
- This dessert is best served chilled and can be stored in the refrigerator for up to 3 days.
- Foil lining the pan helps with easy removal and serving of the dessert.
