Ingredients
Protein
- 1 large chicken breast (about 8 oz), cubed
Vegetables
- 1/2 cup carrots, sliced
- 1 cup broccoli, chopped
Rice
- 1 cup brown or white rice
Oils & Seasonings
- 1 tbsp olive oil (divided: 1/2 tbsp + 1/2 tbsp)
- 1 tsp garlic powder
- 1/2 tsp salt
- Toppings: sesame seeds, chopped green onions
Teriyaki Sauce
- 1/2 cup water
- 1/2 tsp sesame oil
- 2 tbsp brown sugar or coconut sugar
- 1/4 cup soy sauce or coconut aminos
- 1 tsp honey
- 1 garlic clove, minced
- 1/2 tsp ginger paste or fresh minced ginger
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
Instructions
- Cook the Rice: Prepare the brown or white rice according to the package instructions, ensuring it is fluffy and tender for the base of your bowl.
- Stir-Fry the Vegetables: Heat 1/2 tablespoon olive oil in a large pan over medium heat. Add sliced carrots and chopped broccoli. Season with garlic powder and salt. Cook for about 5 minutes until the vegetables are tender but still vibrant. Remove them from the pan and set aside.
- Cook the Chicken: Add the remaining 1/2 tablespoon olive oil to the same pan and heat until hot. Place cubed chicken breast into the pan, cooking undisturbed for 3 minutes to develop a golden brown crust on one side. Flip the pieces and cook another 3 minutes until browned and nearly cooked through.
- Prepare Teriyaki Sauce: While the chicken cooks, combine water, sesame oil, brown or coconut sugar, soy sauce or coconut aminos, honey, minced garlic, and ginger paste in a bowl. Mix the cornstarch with water separately to create a slurry.
- Combine Sauce and Chicken: Pour the sauce mixture into the pan with the chicken. Stir and cook for a couple more minutes until the sauce thickens to a glossy consistency. The sauce may be quite generous—spoon some over the cooked vegetables for extra flavor.
- Assemble the Bowl: Layer cooked rice at the bottom, followed by the stir-fried veggies, then the glossy teriyaki chicken on top. Garnish with a sprinkle of sesame seeds and chopped green onions. Serve warm and enjoy your homemade chicken teriyaki bowl!
Notes
- Use brown rice for a whole grain option or white rice for classic flavor and texture.
- Substitute chicken breast with thigh meat for juicier results.
- Adjust sweetness of the sauce by varying the amount of brown sugar or honey to your taste.
- The sauce can be made gluten-free by using tamari or coconut aminos instead of soy sauce.
- Make sure not to overcrowd the pan when cooking chicken to ensure even browning.
- Vegetables can be varied based on preference; snap peas or bell peppers would also work well.
