Instructions
- Roast garlic: Preheat your oven to 400°F (200°C). Wrap the whole head of garlic in aluminum foil and roast in the oven for 40 minutes, or until the garlic is very soft. Alternatively, if you’re short on time, you can substitute with garlic powder.
- Prepare cauliflower: While the garlic roasts, wash and cut the cauliflower into florets. Boil the florets in a large pot of water for about 10 minutes or until they become tender when pierced with a fork.
- Drain and dry cauliflower: Drain the cooked cauliflower and place it in a clean kitchen towel. Squeeze out as much moisture as possible to prevent watery mashed cauliflower.
- Blend ingredients: Add the drained cauliflower, roasted garlic cloves (squeezed out from the bulb), Greek yogurt, almond milk, olive oil, sea salt, and black pepper to a food processor. Blend until smooth, scraping down the sides as needed. Adjust the amount of garlic to your taste.
- Serve: Spoon the creamy cauliflower mashed potatoes into a serving dish and serve hot, optionally garnishing with herbs or your favorite toppings.
