Ingredients

Bang Bang Salmon

  • 1 1/2 pounds salmon filet
  • 1–2 tablespoons all-purpose seasoning mix (or homemade blend: 1 tsp coarse kosher salt, onion powder, garlic powder, paprika)
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 clove garlic, grated
  • 1 teaspoon soy sauce
  • Chili crisp, for topping

For Serving

  • Cooked rice
  • Avocado Cucumber Salsa:
    • 1 avocado, diced
    • 1/2 cucumber, diced
    • Handful chopped cilantro
    • 1 tablespoon honey
    • Pinch of salt
    • Bit of lime juice


Instructions

  1. Prep the Salmon: Preheat the oven to 400°F (204°C). Cut the salmon into individual portions if desired, then pat the salmon pieces dry with a paper towel. Coat each piece evenly with the all-purpose seasoning mix or homemade seasoning blend. Lay the salmon pieces on a parchment-lined baking sheet.
  2. Make the Bang Bang Sauce: In a small bowl, combine the mayonnaise, sweet chili sauce, grated garlic, and soy sauce. Mix well until creamy and smooth. Set aside half of this sauce to use after baking.
  3. Bake the Salmon: Spread a small spoonful of the bang bang sauce over the top of each seasoned salmon piece. Place the baking sheet towards the top rack of the oven and bake the salmon for 10 minutes. After baking, turn on the broiler and broil the salmon for an additional 2-3 minutes until the tops turn golden brown and caramelized.
  4. Prepare Avocado Cucumber Salsa: In a small bowl, gently mix together diced avocado, diced cucumber, chopped cilantro, lime juice, honey, and a pinch of salt. This fresh salsa adds a sweet and crunchy contrast to the rich salmon.
  5. Serve: Plate the salmon over cooked rice and serve with the avocado cucumber salsa on the side. Drizzle the reserved bang bang sauce and chili crisp over the salmon just before serving for extra flavor and texture. Enjoy this easy and vibrant meal!
