Ingredients
Chicken and Potatoes
- 6 bone-in, skin-on chicken thighs (about 900 grams)
- 700 grams baby potatoes, halved if large
Honey Lemon Sauce and Seasoning
- 2 medium fresh lemons (1 sliced, 1 juiced)
- 3 tablespoons honey
- 4 garlic cloves, minced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions
- Preheat Oven: Preheat your oven to 200°C (400°F) to ensure it reaches the optimal temperature for baking the chicken and potatoes evenly.
- Prepare Sauce: In a mixing bowl, whisk together honey, lemon juice from one lemon, olive oil, minced garlic, salt, black pepper, dried thyme, and dried rosemary until well combined to create a flavorful glaze.
- Arrange Potatoes: Lightly grease a large baking dish with olive oil or non-stick spray, then spread the baby potatoes evenly in a single layer to allow even roasting.
- Place Chicken and Add Sauce: Place the chicken thighs skin-side up on top of the potatoes. Pour the honey lemon mixture evenly over the chicken and potatoes. Tuck lemon slices from the second lemon between the chicken pieces to infuse fresh citrus aroma during baking.
- Bake: Bake in the preheated oven for 45 to 50 minutes or until the chicken reaches an internal temperature of 75°C (165°F) and the skin is golden brown and crispy. Halfway through cooking, spoon some pan juices over the chicken to keep it moist and flavorful.
- Broil for Caramelization: For extra caramelization and a beautifully crisp skin, broil the chicken for an additional 3 to 5 minutes. Keep a close eye to prevent burning.
- Rest and Serve: Remove the dish from the oven and let rest for 5 minutes to allow the juices to redistribute. Spoon the pan juices over the chicken and potatoes before serving warm.
Notes
- Pat the chicken dry before seasoning to ensure crispy skin.
- Do not overcrowd the baking dish to allow proper caramelization of the potatoes and chicken.
- You can marinate the chicken in the sauce for up to 8 hours for deeper flavor infusion.
- Fresh herbs can be used instead of dried thyme and rosemary; increase the quantity to about 2 teaspoons each if substituting.
