Ingredients
For the Dough:
- 250 grams plain flour (can be substituted with gluten-free flour)
- 125 ml water (warm water improves texture)
- 125 grams butter (margarine may be used for a dairy-free option)
For the Filling:
- 400 grams pumpkin (feel free to replace with squash)
- 200 grams chorizo (replace with another sausage for a milder kick)
- 2 medium caramelized onion (sautéed shallots can be a great alternative)
- 2 tablespoons shredded sage leaves (thyme or rosemary can also work)
Instructions
- Preparation: Preheat your oven to 200°C (392°F).
- Making the Dough: In a mixing bowl, combine plain flour and a pinch of salt, then mix in melted butter and warm water until a soft dough forms. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
- Preparing the Filling: Cut the pumpkin into small chunks, season with salt and pepper, and roast for about 25 minutes until tender. In a frying pan, sauté the chorizo until browned, then add sliced onions and cook until caramelized. Combine the warm roasted pumpkin, cooked chorizo, and caramelized onions in a large bowl, mixing well.
- Assembly: On a floured surface, roll out the chilled dough to about 3mm thick, and cut out circles. Place a tablespoon of filling on one half of each dough circle, fold over, and seal the edges by crimping with a fork.
- Baking: Arrange the hand-pies on a baking tray, brush with egg wash if desired, and bake for 20-25 minutes until golden brown.
