- 1 cup grated zucchini (squeeze out excess moisture)
- 1 large egg
- ¼ cup grated Parmesan cheese
- ¼ cup breadcrumbs (plain or Italian-style)
- 2 cloves garlic, minced
- 2 tbsp chopped parsley (or 1 tsp dried)
- ¼ tsp salt
- ¼ tsp black pepper
- Optional: ¼ tsp onion powder or Italian seasoning
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth, and squeeze out as much moisture as possible.
- Combine Ingredients: In a medium bowl, mix together the zucchini, egg, Parmesan, breadcrumbs, garlic, parsley, salt, pepper, and any optional seasonings. Stir well to combine.
- Form Bites: Scoop out about 1 tablespoon of the mixture and shape it into small balls or patties. Arrange them on the prepared baking sheet.
- Bake: Bake for 18–22 minutes, flipping halfway through, until golden brown and firm to the touch.
- Serve: Enjoy these bites warm with marinara sauce, ranch, garlic aioli, or sour cream for dipping.
