  • ¼ cup grated Parmesan cheese

  • 2 cloves garlic, minced
  • 2 tbsp chopped parsley (or 1 tsp dried)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Optional: ¼ tsp onion powder or Italian seasoning

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth, and squeeze out as much moisture as possible.
  3. Combine Ingredients: In a medium bowl, mix together the zucchini, egg, Parmesan, breadcrumbs, garlic, parsley, salt, pepper, and any optional seasonings. Stir well to combine.
  4. Form Bites: Scoop out about 1 tablespoon of the mixture and shape it into small balls or patties. Arrange them on the prepared baking sheet.
  5. Bake: Bake for 18–22 minutes, flipping halfway through, until golden brown and firm to the touch.
