Description

Moist, nutty, and naturally sweet, these Healthy Pecan Greek Yogurt Banana Bread Muffins are perfect for breakfast or snacks.


Ingredients

Wet Ingredients:

  • 2 ripe bananas (mashed)
  • ½ cup Greek yogurt
  • 1 egg
  • ¼ cup honey or maple syrup

Dry Ingredients:

  • ¾ cup oat flour
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ cup chopped pecans

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C) and grease or line muffin tin.
  2. Mash bananas: Mash bananas in a mixing bowl.
  3. Mix wet ingredients: Add Greek yogurt, egg, and honey/maple syrup to mashed bananas and mix well.
  4. Combine dry ingredients: In another bowl, combine oat flour, baking powder, and cinnamon.
  5. Combine wet and dry mixtures: Gently fold dry ingredients into the wet mixture.
  6. Add pecans: Fold in chopped pecans.
  7. Fill muffin cups: Scoop batter into muffin cups, filling them ¾ full.
  8. Bake: Bake for 18–22 minutes, or until a toothpick comes out clean.
