Ingredients
Wet Ingredients:
- 2 ripe bananas (mashed)
- ½ cup Greek yogurt
- 1 egg
- ¼ cup honey or maple syrup
Dry Ingredients:
- ¾ cup oat flour
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- ¼ cup chopped pecans
Instructions
- Preheat oven: Preheat oven to 350°F (175°C) and grease or line muffin tin.
- Mash bananas: Mash bananas in a mixing bowl.
- Mix wet ingredients: Add Greek yogurt, egg, and honey/maple syrup to mashed bananas and mix well.
- Combine dry ingredients: In another bowl, combine oat flour, baking powder, and cinnamon.
- Combine wet and dry mixtures: Gently fold dry ingredients into the wet mixture.
- Add pecans: Fold in chopped pecans.
- Fill muffin cups: Scoop batter into muffin cups, filling them ¾ full.
- Bake: Bake for 18–22 minutes, or until a toothpick comes out clean.
