Description

This Vegetarian Lentil & Sweet Potato Curry is a creamy and flavorful one-pot meal that is both easy to make and incredibly delicious. Perfect for a cozy winter evening, the combination of lentils, sweet potatoes, and aromatic spices make this dish a comforting and nutritious choice for dinner.


Ingredients

Main Ingredients:

  • 1 Tbsp coconut oil
  • 1/2 small yellow onion, diced
  • 1 tsp minced garlic
  • 3 medium sweet potatoes, peeled and cubed
  • 1 cup lentils

Seasonings:

  • 1 1/2 Tbsp yellow curry powder
  • 1/2 tsp ginger
  • Salt and pepper to taste

Liquids:

  • 5 cups vegetable stock
  • 1 cup coconut milk
  • 1 tsp crushed red pepper (optional)

Additional:

  • 2 cups chopped kale

Instructions

  1. Cook the Aromatics: In a pot, sauté the onion and garlic in coconut oil over medium heat.
  2. Add Vegetables and Lentils: Stir in the sweet potatoes and lentils, then add the curry powder and ginger. Mix well.
  3. Simmer: Pour in the vegetable stock, bring to a boil, then simmer covered for about 30 minutes until everything is tender.
