Ingredients
Chicken and Coating
- 1 large chicken breast, boneless, skinless
- 1/2 cup all-purpose flour
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1 large egg
- 2 tbsp milk
- Canola oil or peanut oil, for frying (enough for 1-2 inches deep in skillet)
Sauce and Garnish
- 1/3 cup sweet chili sauce
- 1 carrot, julienned, for garnish
- Fresh cilantro, chopped, for garnish
- Sesame seeds, for garnish
Instructions
- Prepare the oil: Pour 1-2 inches of canola or peanut oil into a deep skillet and preheat it over medium heat until the temperature reaches 350°F (175°C), ideal for frying.
- Cut the chicken: Slice the chicken breast into bite-sized pieces to ensure even cooking and crispy coating.
- Mix dry coating: In a shallow dish, combine the all-purpose flour, garlic powder, salt, and black pepper, mixing well to evenly distribute the seasoning.
- Prepare wet mixture: In another shallow dish, whisk the egg, milk, salt, and black pepper together until fully combined.
- Coat the chicken: Dredge each piece of chicken first in the dry flour mixture, then dip into the egg and milk mixture, and finally coat again in the dry mixture, ensuring each piece is fully covered for maximum crispiness.
- Fry the chicken bites: Carefully place the coated chicken pieces into the hot oil. Fry each side for about 3-4 minutes until golden brown and cooked through. Remove the bites and drain on paper towels to absorb excess oil. Sprinkle lightly with salt while still warm.
- Toss with sauce and garnish: Transfer the drained chicken bites to a large bowl, toss them with the sweet chili sauce until evenly coated. Plate the bites and garnish with julienned carrot, chopped fresh cilantro, and a sprinkle of sesame seeds. Serve immediately while warm.
Notes
- Ensure the oil is hot enough (350°F) before frying to achieve a crispy texture and prevent greasy chicken.
- Julienned carrot and cilantro provide fresh texture and color contrast to the spicy and sweet bites.
- Sweet chili sauce can be substituted with homemade Thai chili sauce for a more authentic flavor.
- Use a deep skillet or a fryer to maintain consistent oil temperature.
- Drain chicken properly on paper towels to avoid sogginess.
- Adjust seasoning in flour and egg mixtures according to taste preferences.
