Ingredients
For the Teriyaki Sauce:
- 3/4 cup low-sodium soy sauce
- 1/2 cup water
- 1/4 cup brown sugar
- 1/2 teaspoon ground ginger
- 1/2 teaspoon minced garlic
- 2 Tablespoons cornstarch + 2 Tablespoons water
For the Casserole:
- 1 pound boneless skinless chicken breasts
- 1 bag (12 ounces) refrigerated stir-fry vegetables (broccoli, carrots, snow peas, etc.), steamed
- 3 cups cooked brown or white rice
Instructions
- Preheat oven: Preheat oven to 350°F and spray a 9×13-inch baking pan with non-stick spray.
- Make Teriyaki Sauce: In a saucepan, combine soy sauce, water, brown sugar, ginger, and garlic. Boil, then thicken with cornstarch mixture.
- Prepare Chicken: Arrange chicken in the baking pan, surround with steamed veggies, and pour sauce over them. Bake covered for 30 minutes.
- Assemble Casserole: Shred chicken, add rice to the dish, pour remaining sauce, and toss. Bake for 10 minutes.
- Serve: Let stand for 5 minutes, then drizzle with reserved sauce before serving.
