Description

Teriyaki Chicken Casserole is a delicious and easy-to-make dish that combines tender chicken, flavorful teriyaki sauce, steamed vegetables, and rice in a comforting casserole. Perfect for a family dinner or meal prep.


Ingredients

For the Teriyaki Sauce:

  • 3/4 cup low-sodium soy sauce
  • 1/2 cup water
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon minced garlic
  • 2 Tablespoons cornstarch + 2 Tablespoons water

For the Casserole:

  • 1 pound boneless skinless chicken breasts
  • 1 bag (12 ounces) refrigerated stir-fry vegetables (broccoli, carrots, snow peas, etc.), steamed
  • 3 cups cooked brown or white rice

Instructions

  1. Preheat oven: Preheat oven to 350°F and spray a 9×13-inch baking pan with non-stick spray.
  2. Make Teriyaki Sauce: In a saucepan, combine soy sauce, water, brown sugar, ginger, and garlic. Boil, then thicken with cornstarch mixture.
  3. Prepare Chicken: Arrange chicken in the baking pan, surround with steamed veggies, and pour sauce over them. Bake covered for 30 minutes.
  4. Assemble Casserole: Shred chicken, add rice to the dish, pour remaining sauce, and toss. Bake for 10 minutes.
  5. Serve: Let stand for 5 minutes, then drizzle with reserved sauce before serving.
