Ingredients

Chicken Mixture:

  • 2 cups cooked chicken, shredded or cubed
  • 2 cups cooked rice
  • 1 cup sliced carrots
  • 1 cup chopped bell peppers, any color
  • 1 cup steamed broccoli florets
  • 1 cup frozen peas, thawed

Sauce and Cheese:

  • ½ cup teriyaki sauce, store-bought or homemade
  • ¼ cup soy sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp olive oil, plus extra for greasing dish
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat Oven: Set oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Mix Ingredients: In a large bowl, combine chicken, rice, carrots, bell peppers, broccoli, and peas.
  3. Add Sauces and Spices: Stir in teriyaki sauce, soy sauce, garlic powder, onion powder, and olive oil until well coated.
  4. Layer and Bake: Spread the mixture into the baking dish and top with mozzarella cheese. Cover with foil and bake for 25–30 minutes until veggies are tender and cheese is melted.
  5. Brown Cheese: Uncover and bake for an additional 5 minutes to lightly brown the cheese.
