Ingredients
Acorn Squash:
- 3 small acorn squash (or 2 large)
- 1 Tbsp extra virgin olive oil, plus more for roasting
- 1 tsp kosher salt, divided
- ¼ tsp black pepper
Stuffing:
- 1 lb lean ground turkey
- ½ yellow onion, finely chopped
- 2 stalks celery, finely chopped
- 1 small apple, chopped
- 3 cloves garlic, minced
- 1 tsp fresh rosemary, chopped
- 1 Tbsp fresh thyme, chopped
- ½ cup chicken broth
- ¼ cup dried cranberries
- ½ cup shredded mozzarella cheese
Instructions
- Preheat the Oven: Preheat oven to 400°F (200°C) and line a baking sheet with greased parchment paper.
- Prepare Squash: Cut squash in half, remove seeds, drizzle with olive oil, salt, and pepper. Roast flesh side up for 40-60 minutes until tender.
- Prepare Stuffing: Saute onion, apple, celery. Add garlic, herbs, ground turkey, salt, and pepper. Cook until turkey is browned.
- Finish Stuffing: Add chicken broth, cheese, and cranberries. Mix until cheese melts.
- Fill Squash: Stuff squash halves with turkey mixture and top with cheese.
- Final Bake: Bake stuffed squash for 5 minutes until cheese melts. Broil for a golden top if desired.
