Ingredients

Grilled Corn:

  • 2 ears of corn, grilled and kernels removed

Cucumber Salad:

  • 1 large cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped

Dressing:

  • 1/2 cup Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Grill the Corn: Preheat grill to medium-high heat. Grill corn for 10-12 minutes, turning occasionally, until tender and slightly charred. Remove and let cool. Remove kernels.
  2. Prepare Salad: Combine corn kernels, cucumber, red onion, and cilantro in a bowl.
  3. Make Dressing: Whisk together Greek yogurt, mayonnaise, garlic, lime juice, chili powder, salt, and pepper. Pour over salad and toss.
  4. Chill: Refrigerate for at least 30 minutes.
  5. Season and Serve: Adjust seasoning if needed. Garnish with cilantro and chili powder. Serve chilled.
