Ingredients
Grilled Corn:
- 2 ears of corn, grilled and kernels removed
Cucumber Salad:
- 1 large cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
Dressing:
- 1/2 cup Greek yogurt
- 1 tablespoon mayonnaise
- 1 clove garlic, minced
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Grill the Corn: Preheat grill to medium-high heat. Grill corn for 10-12 minutes, turning occasionally, until tender and slightly charred. Remove and let cool. Remove kernels.
- Prepare Salad: Combine corn kernels, cucumber, red onion, and cilantro in a bowl.
- Make Dressing: Whisk together Greek yogurt, mayonnaise, garlic, lime juice, chili powder, salt, and pepper. Pour over salad and toss.
- Chill: Refrigerate for at least 30 minutes.
