Strawberry Tiramisu is a delightful twist on the classic Italian dessert, featuring fresh strawberries, creamy mascarpone, and ladyfingers soaked in a sweet strawberry syrup. This no-bake version is perfect for summer gatherings or special occasions.
Ingredients
For the Strawberry Syrup:
- 1/3 cup strawberry jam
- 1/4 cup water (or prosecco)
- 1/2 tsp balsamic vinegar (or lemon juice)
For the Mascarpone Filling:
- 1/2 cup heavy whipping cream
- 1 cup mascarpone cheese
- 1/2 cup confectioners’ sugar
- 1/2 tsp vanilla extract
For Assembly:
- 2 cups sliced strawberries (1 pint)
- 24 ladyfingers
Instructions
- Prepare the Mascarpone Filling: In a medium bowl, combine mascarpone cheese, cream, sugar, and vanilla extract. Beat with an electric mixer on medium-high speed until smooth and thickened, about 1 to 1 1/2 minutes.
- Make the Strawberry Syrup: In a small bowl, mix strawberry preserves, water, and balsamic vinegar. Dip ladyfingers in the syrup mixture and arrange them in a single layer at the bottom of an 8”x 8” baking dish.
- Layer the Tiramisu: Spread half of the mascarpone mixture over the ladyfingers, then add a layer of sliced strawberries. Repeat with another layer of ladyfingers, mascarpone mixture, and strawberries.
- Chill and Serve: Cover the dish with cling wrap and refrigerate for at least 8 hours or overnight to allow the flavors to meld. Serve chilled and enjoy!
