Ingredients
For the Salad:
- 2 chicken breasts
- ½ teaspoon paprika
- ¼ teaspoon garlic powder
- 6 cups romaine lettuce, chopped
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can corn, drained
- 1 pint cherry tomatoes, halved
- ⅓ red onion, sliced
- 1 avocado, diced
- 1 cup sliced mini sweet peppers (or 1 bell pepper)
- ⅓ cup chopped cilantro
For the Cilantro Lime Dressing:
- 1 ½ cups cilantro leaves & stems
- 1 cup plain Greek yogurt (full-fat)
- 2 tablespoons fresh lime juice
- 2 tablespoons extra virgin olive oil
- 1 clove garlic
- ¼ teaspoon salt
- 1 tablespoon water
Instructions
- Season Chicken: In a small bowl, mix paprika, garlic powder, salt, and pepper. Rub onto both sides of chicken breasts.
- Cook Chicken: Heat olive oil in a skillet over medium-high heat. Cook chicken for 5-6 minutes on each side until no longer pink.
- Make Dressing: Blend cilantro, yogurt, lime juice, olive oil, garlic, salt, and water until smooth.
- Assemble Salad: Combine all salad ingredients in a bowl. Drizzle with desired amount of dressing and toss to coat.
Notes
- You can also use a store-bought version of the cilantro lime dressing or try other dressings like cilantro lime vinaigrette or creamy avocado dressing.
