Description

This Southwest Chicken Salad is a vibrant and flavorful dish topped with a creamy cilantro lime dressing. Packed with protein and fresh veggies, it’s a satisfying meal that’s perfect for a quick and easy lunch or dinner.


Ingredients

For the Salad:

  • 2 chicken breasts
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • 6 cups romaine lettuce, chopped
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can corn, drained
  • 1 pint cherry tomatoes, halved
  • red onion, sliced
  • 1 avocado, diced
  • 1 cup sliced mini sweet peppers (or 1 bell pepper)
  • ⅓ cup chopped cilantro

For the Cilantro Lime Dressing:

  • 1 ½ cups cilantro leaves & stems
  • 1 cup plain Greek yogurt (full-fat)
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic
  • ¼ teaspoon salt
  • 1 tablespoon water

Instructions

  1. Season Chicken: In a small bowl, mix paprika, garlic powder, salt, and pepper. Rub onto both sides of chicken breasts.
  2. Cook Chicken: Heat olive oil in a skillet over medium-high heat. Cook chicken for 5-6 minutes on each side until no longer pink.
  3. Make Dressing: Blend cilantro, yogurt, lime juice, olive oil, garlic, salt, and water until smooth.
  4. Assemble Salad: Combine all salad ingredients in a bowl. Drizzle with desired amount of dressing and toss to coat.
