Ingredients

For the Cookies:

  • ¾ cup unsalted butter
  • ½ cup granulated sugar
  • ½ cup brown sugar (packed)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp cornstarch
  • 2 tsp pumpkin pie spice
  • ¼ tsp salt

For the Cinnamon Sugar Coating:

  • ⅓ cup granulated sugar
  • 1 tsp ground cinnamon

For the Apple Pie Filling:

  • 2 medium apples (peeled, diced, I used Honeycrisp)
  • 1 tbsp unsalted butter
  • 3 tbsp brown sugar
  • 1 tsp ground cinnamon
  • ½ tsp cornstarch

For Topping:

  • Salted caramel sauce (store-bought or homemade)

Instructions

  1. Prepare the Cookie Dough: In a mixing bowl, cream together the butter and sugars until light and fluffy. Add the eggs and vanilla, mixing well. In a separate bowl, whisk together the flour, baking powder, cornstarch, pumpkin pie spice, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Chill the dough.
  2. Make the Apple Pie Filling: In a saucepan, cook the apples, butter, brown sugar, cinnamon, and cornstarch until the apples are tender and the mixture thickens. Allow to cool.
  3. Assemble the Cookies: Take a portion of chilled dough, flatten it, place a spoonful of apple pie filling in the center, and seal the dough around the filling. Roll the cookie in the cinnamon sugar mixture.
  4. Bake: Place the cookies on a baking sheet and bake in a preheated oven until lightly golden. Let them cool before drizzling with salted caramel sauce.
