Ingredients

Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Sauce:

  • 1 tablespoon garlic, minced
  • 1 cup mushrooms, sliced
  • 4 slices bacon, cooked and crumbled
  • 2 cups fresh spinach, chopped
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Season the chicken: Season the chicken breasts with salt and pepper on both sides.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side. Remove and set aside.
  3. Prepare the sauce: In the same skillet, sauté garlic and mushrooms. Add spinach, cream, broth, thyme, and red pepper flakes. Simmer until thickened.
  4. Finish the dish: Stir in bacon, return chicken to the skillet, and simmer to heat through.
  5. Serve: Spoon the creamy spinach and mushroom mixture over the chicken and serve.
