Description
This one-pot smothered chicken and rice is a comforting, flavor-packed meal made with seasoned chicken, veggies, and creamy rice. Perfect for weeknights!
Ingredients
Seasoned Chicken:
- 2 Boneless, skinless chicken breasts (about 1 to 1.5 lbs), halved lengthwise
- Garlic Powder, Onion Powder, Smoked Paprika, Kinder’s Buttery Poultry Blend, Slap Ya Mama Cajun Seasoning (to taste)
- 1 tbsp Olive Oil
Vegetables and Rice:
- 2 tbsp Salted Butter, divided in half
- 1 Yellow Onion, diced
- 1 Green Bell Pepper, diced
- 1 Rib of Celery, diced
- 7–8 Garlic Cloves, minced
- 1.5 Cups Water
- 1 tsp Knorr Chicken Flavored Bouillon (or 1.5 cups chicken broth)
- 10.5 oz Can of Cream of Chicken Soup
- 1 Cup Rinsed Basmati Rice (or jasmine rice with adjustments)
- Salt and Pepper to taste
Instructions
- Season and Cook Chicken: Slice chicken breasts in half, season generously, then sear in a skillet until cooked through. Set aside.
- Prepare Vegetables and Rice: Sauté onion, pepper, and celery, then add garlic. Mix in bouillon, water, and cream of chicken soup. Add rice and simmer.
- Combine and Serve: Shred or chop the chicken, add back to the pan with rice, stir, taste, adjust seasoning, and serve with side dishes.

- For added heat, consider diced green chiles or jalapeños.
- Try adding smoked sausage for a meatier version.
- For a creamier option, stir in heavy cream or cheese.
- Additional veggies like corn, peas, or spinach can be stirred in at the end.
