Ingredients
Main Ingredients
- 1 cup uncooked brown rice
- 1 cup white onion, chopped
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon granulated garlic
- ½ teaspoon Italian seasoning
- 1 can condensed cream of chicken soup
- 2 cups chicken stock
- 1 pound boneless skinless chicken breast, cut into ½-inch cubes
- 2 cups fresh broccoli, chopped
- 1 cup mild cheddar cheese, shredded
Optional Toppings
- Additional cheddar cheese for topping
- Chopped parsley
Instructions
- Prepare Slow Cooker: Lightly coat the slow cooker with cooking spray to prevent sticking and facilitate easy cleanup.
- Combine Ingredients: Add the uncooked brown rice, chopped onion, salt, black pepper, granulated garlic, Italian seasoning, condensed cream of chicken soup, chicken stock, and cubed chicken breasts into the slow cooker. Stir everything until well combined.
- Cook First Stage: Cover the slow cooker and cook on low heat for 2 hours to allow the rice to begin cooking and chicken to start tenderizing.
- Add Broccoli: After 2 hours, gently stir in the chopped broccoli to distribute evenly throughout the mixture. Cover and continue cooking on low for another 2 hours to allow broccoli to soften and flavors to meld.
- Incorporate Cheese: Once the total 4-hour cooking time is complete, stir in the shredded mild cheddar cheese until it is fully melted and incorporated creating a creamy, cheesy texture.
- Serve: Serve the dish warm. Optionally top with additional shredded cheddar cheese and chopped parsley for presentation and extra flavor.
Notes
- Make sure to thaw chicken breasts before adding them to the slow cooker for safe and even cooking.
- Store any leftover cheesy crockpot chicken and rice in an airtight container in the refrigerator for 3-4 days.
- Using a crockpot liner can make cleanup easier and quicker.
