Description

This Simple Kale Salad is a delightful combination of fresh kale, Parmesan cheese, almonds, and dried cranberries, all tossed in a tangy homemade dressing. It’s a perfect side dish for any meal.


Ingredients

Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon Dijon mustard
  • 1 to 2 teaspoons honey
  • Kosher salt and freshly ground black pepper, to taste

Salad:

  • 2 bunches kale, washed and chopped
  • Drizzle of olive oil
  • Pinch of kosher salt
  • 1/2 cup finely shredded Parmesan cheese
  • 1/3 cup toasted sliced almonds
  • 1/3 cup dried cranberries


Instructions

  1. Make the dressing: In a small bowl or jar, whisk together olive oil, lemon juice, balsamic vinegar, Dijon mustard, honey, salt, and pepper. Set aside.
  2. Prepare the kale: Remove stems and finely chop the kale. Place in a large bowl, drizzle with olive oil and salt, massage until softened.
  3. Assemble the salad: Drizzle the dressing over the kale, add Parmesan, nuts, and dried fruit. Toss well and serve.
