Description

Sopapillas are delightful fried pastries known for their light, puffy texture and sweet finish. This recipe guides you to make restaurant-quality sopapillas at home using simple pantry ingredients. Perfectly golden and airy, these pastries can be enjoyed dusted with cinnamon sugar or powdered sugar and drizzled with honey for a delicious treat.

Ingredients

Dough

  • 2 cups all purpose flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup warm water
  • 2 tbsp avocado oil or vegetable oil
  • vegetable oil for frying (about 2 inches deep in pan)

Cinnamon Sugar

  • ½ cup sugar
  • 1 tbsp ground cinnamon

Topping

  • ¼ cup powdered sugar
  • 2 tbsp honey

Instructions

  1. Mix Dry Ingredients: In a medium bowl, combine all-purpose flour, sugar, baking powder, and salt. Stir together with a fork until evenly mixed.
  2. Add Wet Ingredients and Form Dough: Mix the avocado or vegetable oil into the warm water, then pour this mixture into the dry ingredients. Use your hands to combine everything into a sticky dough ball.
  3. Knead the Dough: Lightly flour a clean work surface and knead the dough for 3-4 minutes until smooth, adding small amounts of flour if the dough remains sticky. Divide the dough into two balls for easier handling.
  4. Rest the Dough: Place the dough balls back into the bowl, cover with a clean towel, and let them rest for 20-30 minutes to relax the gluten.
  5. Roll and Cut Dough: On a lightly floured surface, roll out each dough ball into a rectangle about ¼ inch thick. Cut into 2-inch squares or preferred size, and let rest for another 10 minutes.
  6. Prepare Oil and Fry: Pour vegetable oil into a large cast iron skillet or Dutch oven to about 2 inches deep. Heat over medium-high heat until reaching 375℉. Use a wire rack on a baking sheet for draining fried sopapillas.
  7. Fry Sopapillas: Carefully place 3 squares at a time into the hot oil. Fry until golden and puffed up, flipping to cook both sides. Remove and drain on wire rack. Allow oil to return to temperature before frying the rest.
  8. Add Coating and Serve: While still warm, dip some sopapillas in cinnamon sugar to coat if desired. Alternatively, sprinkle with powdered sugar and drizzle with honey before serving warm.

Notes

  • Achieving the right oil temperature (375℉) is critical for sopapillas to puff properly and not absorb too much oil.
  • Use a thermometer to monitor oil temperature throughout frying for best results.
  • Rolling the dough to ¼ inch thickness ensures a perfect balance between a crispy exterior and soft interior.
  • Resting dough twice helps with easy rolling and better texture.
  • Choose avocado oil or vegetable oil with a high smoke point for frying.
