Description
This Sopapillas recipe features light, fluffy fried pastries that puff up beautifully and can be enjoyed with a dusting of cinnamon sugar or powdered sugar, drizzled with honey. Perfectly crispy on the outside and soft inside, these traditional treats are easy to make at home with simple pantry ingredients.
Ingredients
Dough
- 2 cups all purpose flour
- 1 tbsp sugar
- 2 tsp baking powder
- ½ tsp salt
- ¾ cup warm water
- 2 tbsp avocado oil or vegetable oil
- vegetable oil for frying (about 2 inches deep in skillet)
Cinnamon Sugar
- ½ cup sugar
- 1 tbsp ground cinnamon
Topping
- ¼ cup powdered sugar
- 2 tbsp honey
Instructions
- Mix Dry Ingredients: In a medium bowl, combine the flour, sugar, baking powder, and salt. Stir together with a fork until evenly mixed.
- Add Wet Ingredients: Mix the avocado or vegetable oil into the warm water, then pour this mixture into the dry ingredients. Use your hands to combine until a sticky dough ball forms.
- Knead Dough: Lightly flour a clean surface and knead the dough for 3-4 minutes until smooth, adding a little flour if very sticky. Divide dough into two balls.
- Rest Dough: Place dough balls back into the bowl, cover with a clean towel, and let rest for 20-30 minutes to relax the gluten for easier rolling.
- Roll Dough: On a floured surface, roll out one dough ball at a time into a 1/4 inch thick rectangle. Cut into 2-inch squares or preferred size.
- Second Rest: Let cut dough squares rest for 10 minutes while you prepare the oil for frying.
- Heat Oil: Pour about 2 inches of vegetable oil into a large cast iron skillet or Dutch oven. Heat over medium-high until oil reaches 375°F (190°C).
- Fry Sopapillas: Carefully place 3 dough squares into the hot oil. They will sink, then rise and puff up as they fry. Turn them once golden brown, then remove to a wire rack over a baking sheet to drain excess oil.
- Continue Frying: Allow oil to return to temperature before frying remaining dough squares in batches.
- Coat and Serve: While still warm, dip sopapillas into cinnamon sugar if desired. Alternatively, sprinkle with powdered sugar and drizzle with honey before serving.

- Use a thermometer to maintain oil temperature at 375°F to ensure sopapillas puff correctly.
- Do not overcrowd the pan when frying to maintain oil temperature and even cooking.
- For crispier sopapillas, fry until deep golden brown but avoid burning.
