Ingredients

For the guacamole:

  • 1 medium-sized avocado (about 8 ounces), mashed
  • 2 tablespoons finely diced red onion
  • 1 teaspoon fresh lime juice
  • 1½ teaspoons chipotles in adobo sauce, finely chopped
  • ¼ teaspoon salt

For the burger:

  • 1 pound raw shrimp, peeled and deveined
  • 1 large egg
  • ¼ cup packed cilantro leaves, washed and dried
  • ¾ teaspoon salt
  • ½ teaspoon ground cumin
  • ½ teaspoon freshly ground black pepper
  • olive oil for the pan
  • about 8 thin slices vine-ripened tomato
  • 1 small handful baby lettuces
  • 4 burger buns, lightly toasted

Instructions

  1. For the guacamole: In a bowl, mash the avocado and mix in the onion, chipotles, lime juice, and salt. Cover and set aside.
  2. For the burgers: Process most shrimp, then add egg, cilantro, salt, cumin, and pepper. Blend, mix with chopped shrimp, form patties, and cook in a pan. Assemble burgers with guacamole, tomato, and lettuce on buns.
