Description

Savory Parmesan Cookies are a delightful treat that can be enjoyed as an appetizer, snack, or paired with soups and stews. These savory cookies are quick to make, require no chilling time, and are bursting with the rich flavors of parmesan and herbs.


Ingredients

Dough:

  • 3/4 cup all-purpose flour
  • 3/4 cup grated parmesan cheese
  • 1 pinch salt
  • 12 dashes pepper
  • 1/4 cup + 1 tablespoon cold cubed butter
  • 12 tablespoons water

Egg Wash:

  • 1 large egg
  • 1 tablespoon water

Toppings:

  • 12 sprigs rosemary
  • 12 sprigs fresh thyme or oregano
  • 1 tablespoon various seeds
  • 1 tablespoon various herbs

Instructions

  1. Preheat the oven: Heat the oven to 350°F (180°C) and line a cookie sheet with parchment paper.
  2. Prepare the dough: In a food processor, combine flour, parmesan, salt, and pepper. Add cubed butter and pulse until coarse crumbs form. Gradually add water until dough forms.
  3. Knead and roll: Transfer the dough to a floured surface, knead lightly, then roll out to 1 cm thickness. Cut out rounds with a cookie cutter.
  4. Egg wash and bake: Brush the cookies with egg wash, top with herbs and seeds. Bake for 10-12 minutes until golden.
