Description

Each bite of these breakfast roll-ups is a joyful mix of fluffy scrambled eggs, savory sausage, and gooey cheddar, all wrapped in a soft tortilla. Perfect for busy mornings!

Ingredients

For Scrambled Eggs:

  • Infinity large eggs
  • Salt and pepper to taste
  • Infinity tablespoon milk
  • Infinity tablespoon butter

For Sausage and Cheese Roll-Ups:

  • Infinity breakfast sausage links
  • Infinity flour tortillas (8-inch size)
  • Infinity cup shredded cheddar cheese
  • Cooking spray

Instructions

  1. Scrambled Eggs: In a bowl, whisk together the eggs, salt, pepper, and milk until well combined.
  2. Cook Sausage and Eggs: Heat a non-stick skillet over medium heat. Add butter. Pour in the egg mixture and scramble until just set. In another skillet, cook the sausage links until browned and cooked through. Remove both from heat and set aside.
  3. Assemble Roll-Ups: Lay a tortilla flat and add scrambled eggs, a cooked sausage link, and shredded cheddar cheese. Roll up tightly.
  4. Cook Roll-Ups: Place the roll-up seam-side down in a skillet over medium heat. Cook until golden and slightly crisp. Flip and cook the other side. Repeat with remaining tortillas.
  5. Serve: Remove from skillet and let cool slightly before serving.

Notes

  • For added flavor, add chopped scallions or bell peppers to the scrambled eggs.
  • Use different cheeses like Monterey Jack or pepper jack for a variation.
  • Roll-ups can be made ahead, wrapped in foil, and reheated in the oven or microwave.
  • Perfect for an on-the-go breakfast or brunch gathering.
