Description

These Roast Beef and Cheddar Sliders combine tender, juicy slices of beef with sharp cheddar cheese, tangy BBQ sauce, and buttery slider rolls for a rich and comforting meal. Cooked low and slow in a smoker, then baked to crispy perfection, these sliders are perfect for casual dinners or crowd-pleasing snacks.


Ingredients

Roast Beef:

  • 1 whole beef roast (sirloin, round, or rump)
  • ¼ cup smoked peppercorn seasoning
  • 1 cup beef tallow, warmed

Sliders:

  • 1 pack slider rolls
  • 12-14 cheddar cheese slices
  • 1 cup BBQ sauce

Butter Topping:

  • 2 tbsp unsalted butter, melted
  • 1 tbsp everything bagel seasoning

Horsey Sauce:

  • ¼ cup mayonnaise
  • 1.5 tbsp prepared horseradish
  • 1.5 tbsp champagne vinegar
  • 1.5 tsp white sugar
  • Kosher salt, to taste


Instructions

  1. Preheat and Prepare Roast: Preheat your smoker to medium-low heat, about 250°F, using indirect cooking. Inject the beef roast with warmed beef tallow evenly throughout and coat the outside with any remaining tallow. Season generously with smoked peppercorn seasoning on all sides.
  2. Smoke the Beef: Place the seasoned roast on the smoker and cook indirectly until the internal temperature reaches approximately 120°F, about 30 minutes. Remove from the smoker and let it rest for 20 minutes to retain juices.
  3. Slice Beef and Prepare Rolls: After resting, slice the beef as thinly as possible. Keep slider rolls whole, then slice them horizontally to create top and bottom layers.
  4. Assemble Sliders: Place the bottom halves of the rolls into a foil pan or oven-safe skillet. Spread a layer of BBQ sauce over the rolls, then add a layer of sliced roast beef and cheddar cheese. Drizzle more BBQ sauce on top, then cover with the top halves of the rolls.
  5. Butter and Season: Brush the tops of the assembled sliders with melted unsalted butter and sprinkle evenly with everything bagel seasoning.
  6. Bake Sliders: Increase smoker temperature to 300–325°F and bake the sliders indirectly for 10–12 minutes, until the tops are golden brown and crispy and the cheese is melted.
  7. Make Horsey Sauce: While the sliders bake and rest, combine mayonnaise, prepared horseradish, champagne vinegar, white sugar, and kosher salt in a small bowl. Mix well and adjust seasoning to taste.
  8. Serve: Remove the sliders from the smoker and let them cool for a few minutes. Slice sliders apart and serve warm with the horsey sauce on the side.
