  • 2 cups powdered sugar

  • 1 teaspoon vanilla extract
  • 23 tablespoons milk (as needed for consistency)

Instructions

  1. Make the Crust: In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9×9-inch baking dish. Set aside.
  2. Cook the Rhubarb Layer: In a small saucepan over medium heat, combine the rhubarb, honey, sugar, and lemon juice. Cook until the rhubarb softens and thickens, about 10 minutes. Allow to cool slightly.
  3. Prepare the Buttercream Swirl: In a mixing bowl, beat the softened butter, powdered sugar, honey, and vanilla until smooth and creamy. Gradually add milk, 1 tablespoon at a time, until the desired consistency is achieved.
