Ingredients
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
For the Rhubarb Layer:
- 2 cups chopped rhubarb
- 1/4 cup honey
- 2 tablespoons sugar
- 1 tablespoon lemon juice
For the Buttercream Swirl:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 2–3 tablespoons milk (as needed for consistency)
Instructions
- Make the Crust: In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9×9-inch baking dish. Set aside.
- Cook the Rhubarb Layer: In a small saucepan over medium heat, combine the rhubarb, honey, sugar, and lemon juice. Cook until the rhubarb softens and thickens, about 10 minutes. Allow to cool slightly.
- Prepare the Buttercream Swirl: In a mixing bowl, beat the softened butter, powdered sugar, honey, and vanilla until smooth and creamy. Gradually add milk, 1 tablespoon at a time, until the desired consistency is achieved.
- Assemble the Bars: Spread the rhubarb mixture evenly over the crust. Drop spoonfuls of buttercream over the rhubarb and use a knife or skewer to swirl it gently.
- Chill: Refrigerate for at least 4 hours or until firm.
- Serve: Slice into bars and serve chilled.
