Ingredients
Pumpkin Bar:
- 15 oz pumpkin puree
- 2 eggs
- 1 1/2 cups sugar
- 1/2 cup oil
- 1 teaspoon Vanilla

- 1/8 teaspoon ground cloves
- 2 cups flour

Cream Cheese Frosting:
- 4 ounces cream cheese (softened)
- 1/4 cup butter (softened, not melted)
- 1 Tablespoon heavy cream
- 1 1/2 cups powdered sugar
- 1 teaspoon Vanilla
Instructions
- Prepare Pumpkin Bar: Line a 9″x9″ baking dish with parchment paper and spray with cooking spray. Set aside.
- Mix Pumpkin Bar Ingredients: In a stand mixer, blend pumpkin, eggs, sugar, oil, vanilla, cinnamon, ginger, and cloves until well combined.
- Combine Dry Ingredients: In a separate bowl, mix flour, salt, baking powder, and baking soda.
- Blend Batter: Gradually add dry ingredients to pumpkin mixture, mixing well. Scrape down the sides of the bowl and mix until smooth.
- Bake: Pour batter into the prepared dish and bake at 350°F for 30-35 minutes. Cool on a wire rack.
- Make Cream Cheese Frosting: In a mixing bowl, cream together cream cheese and butter. Add vanilla and blend. Gradually mix in powdered sugar and heavy cream until smooth.
- Chill and Frost: Chill frosting until the bars are cooled. Spread frosting over bars, sprinkle with cinnamon, and refrigerate for an hour before serving.
