Ingredients
Dough:
- 1 cup warm milk (100°F to 110°F)
- 1 cup plain mashed potatoes
- 2 tablespoons instant dry yeast
- 1/4 cup honey
- 2 teaspoons salt
- 6 tablespoons salted butter (softened)
- 2 large eggs
- 6 cups all-purpose flour
Topping:
- 1 tablespoon salted butter
- 1 tablespoon honey
Instructions
- Dough: In a large mixing bowl, combine warm milk, mashed potatoes, yeast, honey, salt, butter, eggs, and most of the flour. Stir until the dough starts to come together.
- Kneading: Turn the dough out onto a floured surface. Knead for 8–10 minutes, gradually adding the remaining flour until smooth.
- Rising: Transfer the dough to a greased bowl, cover, and let it rise until doubled in size, about 90 minutes.
- Shaping: Divide dough into 24 rolls. Place on a baking sheet and let rise again until doubled, about 1 hour.
- Baking: Preheat oven to 375°F. Bake rolls for 12-14 minutes until browned.
- Topping: Melt butter and honey together. Brush the mixture over the baked rolls.
- Serving: Allow rolls to cool slightly before serving. Enjoy warm or at room temperature.
