Description

Experience the flavors of India with this delicious Pav Bhaji recipe. A medley of vegetables cooked to perfection in a blend of spices, served with buttered buns, this dish is a street food favorite!


Ingredients

For the Garlic Paste:

  • 7 cloves Garlic Big (around 30 grams)
  • 2 tablespoon Red Kashmiri chili powder

Other Ingredients:

  • 2 cups Potatoes (Peeled and cut into cubes)
  • 1 cup Cauliflower florets
  • 2 cups Finely chopped Tomatoes
  • 1 cup Finely chopped Onion
  • 1 cup Finely chopped capsicum / bell pepper
  • ¼ cup dried green peas (or ½ cup fresh/frozen green peas)
  • Salt to taste
  • ½ teaspoon Turmeric powder
  • 1 tbsp + ½ tsp Pav bhaji masala
  • ¼ cup finely chopped cilantro
  • 2 tablespoon Butter
  • 1 tablespoon Oil
  • 1 teaspoon kasuri methi
  • 2 teaspoon lime juice


Instructions

  1. Soaking dried green peas: Rinse dried green peas and soak in water overnight.
  2. Cooking vegetables and peas: Pressure cook vegetables and peas until soft. Mash and set aside.
  3. Making garlic chutney: Blend garlic and Kashmiri red chili powder with water.
  4. Cooking Pav Bhaji: Sauté garlic chutney, onions, tomatoes, bell pepper, and spices. Mash and add mashed vegetables. Simmer.
  5. Toast the Pav: Melt butter, sprinkle pav bhaji masala and cilantro on buns. Toast until golden.
  6. Serve the Pav Bhaji: Plate bhaji, sprinkle onion, cilantro, add butter, and serve with toasted pavs and lemon wedge.

Notes

  • This recipe is spicy, adjust chili powder for milder taste.
  • Proportions of vegetables are crucial for authentic flavor.
  • Use fresh ingredients and good quality spices for best results.
