Description

This One-Pan Caramelized Onion Pasta is a flavorful and satisfying dish that combines the sweetness of caramelized onions with the richness of coconut milk. Easy to prepare and packed with delicious flavors, this pasta will become a favorite in your dinner rotation.


Ingredients

Caramelized Onions:

  • 5 small yellow onions, sliced (or 3 large)
  • 1 head garlic, top sliced off
  • ½ cup sun-dried tomatoes, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp paprika
  • 1 tsp dried parsley

Pasta:

  • ½ cup coconut milk
  • 3 cups farfalle pasta, cooked
  • 1 handful fresh parsley, chopped
  • 1 handful fresh basil, chopped
  • 1 lemon, juiced


Instructions

  1. Preheat the oven: Preheat the oven to 400F.
  2. Prepare the casserole dish: Add the onions, sun-dried tomatoes, paprika, salt, pepper, and dried parsley to a casserole dish. Place the whole garlic head in the middle. Drizzle with olive oil or leftover sun-dried tomato oil, cover with foil, and bake for 1 hour, tossing halfway through.
  3. Cook the pasta: Cook the pasta according to package directions, reserving pasta water.
  4. Finish the dish: Remove garlic from the casserole, squeeze out cloves, and add parsley, basil, lemon juice, coconut milk, cooked pasta, and pasta water. Stir and serve.

Notes

  • You can customize this dish by adding your favorite vegetables or protein.
  • For a creamier sauce, add more coconut milk.
