Ingredients
Caramelized Onions:
- 5 small yellow onions, sliced (or 3 large)
- 1 head garlic, top sliced off
- ½ cup sun-dried tomatoes, chopped
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp paprika
- 1 tsp dried parsley
Pasta:
- ½ cup coconut milk
- 3 cups farfalle pasta, cooked
- 1 handful fresh parsley, chopped
- 1 handful fresh basil, chopped
- 1 lemon, juiced
Instructions
- Preheat the oven: Preheat the oven to 400F.
- Prepare the casserole dish: Add the onions, sun-dried tomatoes, paprika, salt, pepper, and dried parsley to a casserole dish. Place the whole garlic head in the middle. Drizzle with olive oil or leftover sun-dried tomato oil, cover with foil, and bake for 1 hour, tossing halfway through.
- Cook the pasta: Cook the pasta according to package directions, reserving pasta water.
- Finish the dish: Remove garlic from the casserole, squeeze out cloves, and add parsley, basil, lemon juice, coconut milk, cooked pasta, and pasta water. Stir and serve.

- You can customize this dish by adding your favorite vegetables or protein.
- For a creamier sauce, add more coconut milk.
