Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • For the frosting:
  • 1 cup unsalted butter, room temperature
  • 4 cups powdered sugar
  • 2 tbsp heavy cream
  • 1/2 tsp peppermint extract
  • Green food coloring (optional)
  • For the ganache:
  • 1/2 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, oil, buttermilk, vanilla extract, and peppermint extract.
  4. Combine wet and dry ingredients and stir until smooth.
  5. Fill cupcake liners two-thirds full and bake for 18–20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
  6. For the frosting, beat butter until creamy. Gradually add powdered sugar, then mix in heavy cream and peppermint extract. Add green food coloring if desired.
  7. Pipe or spread frosting on cooled cupcakes.
  8. For the ganache, heat heavy cream until hot but not boiling. Pour over chocolate chips and stir until smooth. Let cool slightly, then drizzle over frosted cupcakes.
