Description

These Mini Pumpkin Pie Bites are perfect for fall gatherings or holiday parties. With a buttery crust and a spiced pumpkin filling, these little treats are sure to impress your guests!


Ingredients

Pie Crust:

  • 2 cups all-purpose flour
  • ¾ teaspoon salt
  • ¾ teaspoon granulated sugar
  • ¾ cup very cold unsalted butter, cut into ½-inch cubes
  • 4 tablespoons ice water

Pumpkin Filling:

  • 1 egg
  • ⅓ cup granulated sugar
  • 1 cup pumpkin puree
  • ¼ cup + 2 tablespoons heavy cream
  • ½ teaspoon vanilla extract
  • ¾ teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground cloves
  • ¼ teaspoon salt


Instructions

  1. Pie Crust: Place flour, salt, and sugar in a food processor. Pulse to combine. Add butter and pulse until crumbly. Add ice water and pulse until dough forms. Refrigerate for 1 hour.
  2. Pumpkin Filling: Whisk egg and sugar. Add pumpkin, cream, vanilla, spices, and salt. Whisk until smooth. Refrigerate.
  3. Preheat oven to 375°F. Grease mini muffin tin.
  4. Roll out dough, cut circles, and line muffin tin cups.
  5. Divide filling among cups. Bake for 20-22 minutes.
  6. Cool in tin, then carefully remove. Serve topped with whipped cream.
