Ingredients

  • 1 tablespoon olive oil
  • 1 shallot, minced
  • 4 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 3 cups vegetable broth
  • 1 cup uncooked orzo pasta

Additional Ingredients:

  • 1/2 cup drained sun-dried tomatoes, roughly chopped
  • 1 teaspoon Italian seasoning
  • 1/2 cup heavy cream
  • 2 large handfuls fresh baby spinach
  • 1/2 cup freshly-grated Parmesan cheese
  • 1/4 cup roughly-chopped fresh basil leaves
  • Fine sea salt and freshly-ground black pepper


Instructions

  1. Sauté the aromatics: Heat olive oil in a large sauté pan over medium-high heat. Add shallot, garlic, and crushed red pepper flakes. Sauté for 3 minutes, stirring frequently.
  2. Simmer: Add chickpeas, vegetable broth, orzo, sun-dried tomatoes, Italian seasoning. Stir and simmer until orzo is just shy of al dente.
  3. Add remaining ingredients: Mix in heavy cream, spinach, Parmesan, basil. Cook until spinach wilts and orzo is al dente.
  4. Season: Taste and adjust seasoning with salt and pepper.
