Description

A delightful one-pot dish combining tender chicken, sun-dried tomatoes, orzo pasta, and spinach in a creamy Parmesan sauce.


Ingredients

Chicken:

  • 650 g Chicken breast (about 4 pieces, skinless and boneless, chopped)

Seasonings and Flavors:

  • 1 tbsp Olive oil (or oil from sun-dried tomatoes jar)
  • 3 Garlic cloves (peeled and crushed)
  • 170 g Sun-dried tomatoes (in oil, drained)
  • 1 tsp Oregano
  • 2 tsp Paprika

Other Ingredients:

  • 250 g Orzo
  • 650 ml Hot chicken stock
  • 150 ml Double cream
  • 50 g Parmesan (grated)
  • 120 g Spinach
  • Freshly ground black pepper, to taste


Instructions

  1. Cook the Chicken: Heat oil in a large frying pan, cook chicken until colored.
  2. Add Flavors: Reduce heat, add garlic, sun-dried tomatoes, oregano, and paprika. Cook until garlic softens.
  3. Combine Ingredients: Add orzo, stock, and pepper. Cook covered for 10 minutes.
  4. Finish the Dish: Stir in spinach and cream, cook until spinach wilts and cream is heated. Ensure chicken is cooked through.

  • To enhance flavor, consider using sun-dried tomato oil for cooking.
