Ingredients
Chicken:
- 650 g Chicken breast (about 4 pieces, skinless and boneless, chopped)
Seasonings and Flavors:
- 1 tbsp Olive oil (or oil from sun-dried tomatoes jar)
- 3 Garlic cloves (peeled and crushed)
- 170 g Sun-dried tomatoes (in oil, drained)
- 1 tsp Oregano
- 2 tsp Paprika
Other Ingredients:
- 250 g Orzo
- 650 ml Hot chicken stock
- 150 ml Double cream
- 50 g Parmesan (grated)
- 120 g Spinach
- Freshly ground black pepper, to taste
Instructions
- Cook the Chicken: Heat oil in a large frying pan, cook chicken until colored.
- Add Flavors: Reduce heat, add garlic, sun-dried tomatoes, oregano, and paprika. Cook until garlic softens.
- Combine Ingredients: Add orzo, stock, and pepper. Cook covered for 10 minutes.
- Finish the Dish: Stir in spinach and cream, cook until spinach wilts and cream is heated. Ensure chicken is cooked through.
Notes
- To enhance flavor, consider using sun-dried tomato oil for cooking.
- Adjust seasoning with salt if needed, considering the saltiness of the sun-dried tomatoes.
