- Season the Chicken: Place the Nashville Hot Chicken Seasoning into a bowl. Thoroughly coat each lollipop-shaped drumstick with the seasoning ensuring even coverage for maximum flavor.
- Preheat the Smoker: Set your smoker to an indirect heat of 325°F (163°C). Add wood chunks or chips of your choice to infuse additional smoky flavor into the chicken.
- Smoke the Chicken: Arrange the seasoned chicken lollipops in the smoker. Smoke for approximately 1 hour and 30 minutes or until the internal temperature reaches 175°F (79°C), indicating they are fully cooked and tender.
- Warm the Maple Syrup: As the chicken nears completion, warm the maple syrup in a saucepan over low heat for 1-2 minutes until just warm to the touch—do not boil.
